Kitchari - Ahimsa Food!
I like making Kitchari, a savory Indian porridge, in my slow cooker. It just makes life easier.
In a slow cooker add ingredients in the order listed and do not stir
1 cup basmati rice
1/2 cup yellow split peas or mung beans
3 T olive oil
1 T cumin
1 T fresh hot green chilies minced (or 1 t red pepper flakes, or can or green chilies) or all of it
1/3 cup raw cashew pieces
2 T fresh ginger minced
1 t turmeric powder
1 t asafoetida powder (hing)
I usually add some curry powder
Veggies: (any that you like)
Cauliflower
Potato
Carrot
Sweet potato
5-6 cups water
On top-not mixed in yet 2T veggie broth paste-“better than bullion”
A few sprigs of fresh rosemary
Let simmer 6-ish hours on low
Just before serving add:
1 1/2 t salt
1 T miyokos vegan butter
2/3 cup frozen green peas
Top plate with fresh stuff
Something green like chopped cilantro or arugula or spinach
Fresh chopped tomatoes
Maybe something hot like siriacha sauce
